Heriot-Watt University in Edinburgh, where brewing and distilling have been studied since 1903, is proposing a Centre for Advanced Brewing and Distilling (CABD), at an estimated cost of £35 million. The building would house pilot brewing and distilling equipment, research labs, a sensory analysis suite and carbon capture technology.
Planned funding comes largely from industry (£25.3 million), with the remaining £9.7 million from public funds. The fundraising committee is co-chaired by Ewan Andrew, Diageo’s chief sustainability officer.
An independent study by BiGGAR Economics estimates an additional benefit of about £53 million a year for the Scottish economy and warns that the university’s current facilities can no longer keep up with demand. The centre would help the whisky industry with challenges such as its 2040 net zero target and high water use.
